Mike's Famous Pizza

Have I mentioned how amazing my dad's homemade pizza recipe is?


I thought I had put the recipe on the blog already, but it seems I did not.

Dough (makes enough for 2 pizzas)
3 cups flour
3/4 cup cool water
2 Tbs. olive oil
1 tsp. salt
1 package yeast (2 1/4 tsp.)
1/4 cup warm water
1 Tbs. honey
Sauce
1 can tomato paste
1 can tomato sauce
garlic
oregano

1. Mix yeast with warm water. Allow to proof 10 minutes.
2. Mix cool water, honey, oil, and salt in separate bowl.
3. Mix both 1 and 2 with flour. Knead until smooth texture.
4. Let rise at room temperature for 30-60 minutes.
5. IMPORTANT! Cool dough in fridge for at least 2 hours, up to overnight.
6. Leave dough out at room temperature for 1 hour before cooking.
7. Roll out dough. Put corn meal on pizza stone (or you can also use a cookie sheet if you don't have a pizza stone) to keep dough from sticking. Before putting sauce or toppings on dough, spread a think layer of olive oil on top of rolled out dough.
8. Bake at 450°F for 15 minutes.


This is a spinach and feta cheese pizza with cheddar cheese on top.
