Avocado Egg Salad


This week, I tried out egg salad sandwiches with no mayo.  Instead, I mashed up a ripe avocado and mixed it in with the chopped up hard boiled egg.  This actually turned out quite good.  It needed salt, but after that, to me, it was just as good as the regular egg salad sandwich I would have made with egg and mayonnaise. 


When I took these pictures, Charlie was looking on like he thought I was offering my lunch to him.
