Spring Rolls


These were very fun to make and also enjoyable to eat. You have all kinds of options available of how to fill them too.

First, you need to soak the rice paper wrappers in very warm water until they get soft, approximately 10 seconds. Then, you need to figure out how you are going to carefully get it out of the water without burning yourself or sticking it to itself all over the place. That was the most challenging part of the whole experience. Once you have that figured out, lay the soft rice paper out on a counter, place your filling in the middle, then fold one edge over the filling, fold the top down and the bottom up, and then roll it toward the one open end.



It took two people to make them :)


This time, we baked some strips of tofu and sauteed spinach and thin strips of carrots for the filling. Another time, we cooked coleslaw mix (cabbage and carrots) with a couple eggs and used that for filling. Hoisin sauce was great for dipping both times.
