Pumpkin Brownie Pumpkin Pie

This is a recipe I found here. I've been enjoying trying vegan baking recipes since I am not using eggs this winter. It is fun to discover new replacements for eggs and feeling safe from salmonella when I eat uncooked dough or batter!

This pie has a no crust. It starts with a layer of pumpkin brownie on the bottom, then a layer of pumpkin pie filling, and finally crumbly pecan/cookie topping.


I was really surprised by how much the topping grew and spread over the top of the pie, but it turned out looking very nice. Personally, I like the pumpkin pie part best, though some people I know, but will not mention :) don't so much. The pumpkin brownie underneath makes this a good compromise!
