Garden Proceeds

I like to roast beets in the oven with other root vegetables like sweet potatoes and carrots. In this case, my beets are mixed with other veggies and seasoned with fresh cilantro from the garden. Weirdly enough, these beets (the variety is called chioggia) are supposed to be concentric circles of red and white when you cut them open, but most have been almost completely white when I harvested them, no matter what size. I can't figure this out.


For weeks, we ate salads pretty much every day - until the lettuce started to bolt and became too bitter to enjoy.


I also just harvested the first potatoes
