Another cheese and spinach muffin


Well, these muffins were definitely an experiment. Usually I like to follow baking recipes exactly, but in this case, I was going to alter it a bit, but ended up not having some of the ingredients I thought I did and so I altered it even more. It was supposed to be pumpkin feta muffins, with chunks of fresh pumpkin...

This is what I used:
½ c. canned pumpkin
½ c. Colby jack cheese, cubed
½ c. Parmesan
1 cup fresh spinach, chopped
2 Tbs. fresh cilantro, chopped
2 Tbs. whole flaxseed
2 Tbs. mustard
2 eggs
¾ c. milk
1 c. whole wheat flour
1 c. white flour
4 tsp. baking powder
1 tsp. salt
Mix all the ingredients together (Colby jack cheese, spinach, and cilantro last). Put it into twelve greased muffin cups. Bake at 400F for 20 minutes.
