Cashew Chicken
This is one of the foods that I remember fondly from growing up. Perhaps you could say that it is a comfort food, but I don't know if it is unhealthy enough to be a comfort food...
2 cups of chopped cooked chicken (or uncooked)
Marinate in:
1 Tbs. soy sauce
4 Tbs. water
2 Tbs. sesame oil
4 tsp. cornstarch
Stir fry in 1-2 Tbs. oil:
6 sliced green onions
mushrooms (optional)
celery (optional)
(chicken if uncooked)
Then add the chicken (if already cooked), 1 cup of cashews, 2 cups of green peas and about 1/4 cup of water to make a light gravy. Cook for a few more minutes.
Starting with uncooked chicken gives you more authentic cashew chicken, but it still tastes good if you use chicken that was cooked already!
