Potato Bean Burgers
Here is yet another potato meal. I've certainly had non-meat burgers that were more the consistency of a "real" burger than these were, but it was a nice change of pace from many of the other potato things we ate (during the months of potatoes) because the beans, bun, and avocado helped disguise the fact that this meal, too, revolved around potatoes.
2 c. of cooked white beans - this equals one can - (I used lima beans grown in my garden!)
1/2 lb. of cooked potatoes
2 cloves garlic, minced
2 tsp. lemon juice
2 Tbs. whole wheat flour
1 tsp. salt
1/4 c. fresh basil, chopped
Mash everything together, leaving a few chunks, especially of the potatoes, so everything holds together. Add some extra flour if needed. Form into 6 burger patties and cook on a skillet, flipping until both sides are browned and it is cooked through.
