Aloo Matar

After the big party at our house, we had a lot of leftover potatoes.  Some of them became aloo matar.  I looked at a lot of recipes and picked and chose the parts I liked from each.  This is the result.


Indian food is really fun to eat and very tasty, but it sure does have a lot of ingredients:

5 potatoes, cubed and boiled
1 pound peas, cooked
4 carrots, cubed and boiled with the potatoes
2 onions, chopped
4 cloves garlic
5 tomatoes, chopped
1/2 tsp. ginger powder

1/2 tsp. turmeric
2 tsp. coriander powder
2 tsp. garam masala powder

2 Tbs. olive oil
2 tsp. cumin seeds
1 c. water
salt

Boil the potatoes and carrots.  When they are almost done, add the peas and cook them until all the vegetables are soft when poked with a fork.  Drain off the water.  In the meantime, cook the onions and cumin seeds in the oil until the onions are soft and browned.  Add the garlic and tomatoes and cook them until the tomatoes become very soft, like tomato sauce.  Add all the spices and cook a few more minutes.  Then, stir in the potatoes, peas, and carrots.  Add the cup of water at this point and let it simmer until the sauce becomes the consistency you want.  Put in some salt to taste.
