Gingerbread Cupcakes
I'm still working on posts of things I made in 2012...
The recipe I used calls these Gingerbread Bundts. But when you don't have a mini bundt pan (or any bundt pan, for that matter), you just make due with what you have. I decided to call them cupcakes because I made them for dessert, but if you wanted to eat them for breakfast, I suppose you could call them muffins. I did make them in muffin tins after all.
Although I seem unable to follow most recipes exactly, I almost did it with this one. But I left out the allspice in the cupcakes and the cinnamon in the glaze. Other than that...and the lack of mini bundt pans, nothing. The recipe made exactly 24 cupcakes in regular-sized muffin tins.
