What to do with an abundance of tomatoes
You can layer the cheese and basil on a piece of tomato and drizzle it with olive oil and balsamic vinegar. Or just sprinkle the tomato with salt. Or, if you can't live without bread, put it all on top of a piece of bread. There are lots of good options. But I think it is fun to have such an easy, yet seemingly gourmet meal.
We just had this for dinner last night. I agree, it is easy, but seems like a fancy meal...especially with heirloom tomatoes!
