Tomato and Mayo Sandwiches

I have to give credit to my friend Derek for introducing me to tomato and mayo sandwiches.  I admit that I thought it sounded rather disgusting when he first described them, but when I tasted it, it was actually really good.  If you think about it, it's basically a BLT...minus the B and L.  Below are a couple of pictures that my sister took when we visited Rhode Island and Washington DC a couple of years ago and tasted our first tomato and mayo sandwiches with Derek.  Thanks, Derek!

These sandwiches are great on their own with good bread, fresh tomatoes, and mayo.  But this time I added sprouts, which was very tasty too.  At this time of year when you can actually get an abundance of good, fresh tomatoes, it makes for an easy and enjoyable lunch.
