Strawberry Muffins Revisited

With Valentine's Day approaching, I decided to bake some strawberry muffins. Once again, I had leftover batter to make a little loaf of bread.


However, I also experimented with some of the ingredients to see if healthified alterations would work. It's the same recipe as before, but with the following changes:
Instead of butter, I used 6 Tbs. pureed pumpkin and I used all white whole wheat flour. Although I can tell that they aren't buttery, the muffins taste exactly the same! Strawberry definitely disguises the taste of pumpkin.
