Quinoa and Tofu
For this meal, I baked the tofu in the oven. I cut it into cubes and put the cubes into a baking dish with 1 Tbs. sesame oil, 2 Tbs. soy sauce, and 2 Tbs. water. I baked them at 350F for 35 minutes, stirring them about every 8 minutes.
In the meantime, I sauteed an onion and some garlic in a big saucepan and cooked 1 cup of quinoa (with 2 cups of water) in a separate pot. When the quinoa was done and the onion was cooked, I mixed them together with a package of frozen spinach, thawed and with the water squeezed out. Then I added the tofu and some sun dried tomatoes.
Okay, so it tasted a lot better than it looks in this picture.
