Seitan Pizza

Remember that homemade seitan? Well, when I made it (kind of a long time ago), I froze half. And then what to do with it? I have to confess that this happened before Christmas and here I am now posting a picture... Teaching keeps me pretty busy.

Anyway, how about seitan pizza? I thought it would be kind of like pepperoni because the seitan was spicy when we put it in couscous and fried rice. But intriguingly it became very mild and not spicy at all when the pizza was done.


I don't even eat pepperoni on pizza anyway, so I'm not sure why I wanted to substitute something for it, but I liked this. The seitan was nice and crispy on the edges and a nice flavor and texture.
