Cranberry Everyday Cake
My sister always loves making everyday cakes and since they are very good, this has kind of rubbed off on me. When I had to make a cake for our church soup supper, I looked through the freezer and found cranberries. So, why not make a cranberry everyday cake?

Beat together:
1 stick unsalted butter, softened
1 1/3 c. sugar
1 tsp vanilla
Then beat in:
2 eggs (or 6 Tbs. water + 2 Tbs. ground flax)
1 c. milk curdled with 1 Tbs. vinegar
Mix in:
2 c. flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Grease a 9x13" pan and pour the batter in.
I put about 2 c. cranberries on top.
Then sprinkle with 2 Tbs. sugar. Bake at 400F for 20-25 minutes.
