Muffins
First, bran muffin muffins. I used the same bran muffin recipe as in the loaf, but this time I cooked them on the skillet, kind of like thick pancakes and it was quite good.
Then, I made English muffins, also on the iron skillet.
Combine and let dissolve:
¼ cup water
1 teaspoon sugar
1 Tablespoon yeast
Add:
½ cup hot milk
1 cup water
1 teaspoon salt
2 cups flour
Beat well, let rise for about 45 minutes, then add
3 Tablespoons oil
2 cups flour
Knead well, let rise another 45 minutes, then roll our to ¾ inch thickness. Let it set until it starts to rise, then cut it into squares and bake it on a hot iron skillet or griddle, turning it over several times while cooking.
