Bran Muffin Loaf


We got real Kellogg’s All-bran from the grocery store for Anthony’s breakfasts, but when he didn’t like it, I thought I’d try out bran muffins…in loaf form, since I have neither an oven nor muffin pans. It turned out wonderfully. I used the “traditional” recipe that I found online:
1 ¼ cups flour
½ cup sugar
1 Tbs. baking powder
¼ tsp. salt
2 cups All-bran cereal
1 ¼ cups milk
1 egg
¼ cup oil
Mix the cereal and milk and let it sit for a few minutes- until the cereal is all mushy. Then add the egg and oil, and after that, the rest of the ingredients. Put it into a greased 9x9 pan (mine was circular) and I steamed it for about 40 minutes.
Basically, this ended up tasting like bran muffins, but we could slice it into pieces like bread.
