Green Tomato Pickles

A while ago, I had an overabundance of unripe tomatoes and decided to pickle them.  I just made simple refrigerator pickles.  They turned out well, but we don't normally eat foods which go with pickles.  So I needed to plan meals to go with them.  We had a lot of eggplants at the time, so we ended up making many eggplant burgers!
