Smoked Fish
Ever since I was a kid eating freshly smoked trout at my grandparents' house in South Dakota, I have loved smoked fish. And here in Uganda, though it is eaten differently, I can get smoked fish too.
These came from Kaberamaido and I made them into "pasted fish": smoked fish cooked with peanut sauce, one of my favorite ways to eat it. First, cut the fish into 2-4 pieces, depending on the size of the fish. Soak all of it, from head to tail in water. Follow these instructions for cooking, but leave out the tomato. After the fish is cooked, add your peanut butter little by little until you get a sauce that is the desired thickness.
