Oreo Dessert


Even though we have a decently sized freezer here in Kenya, it still leaves something to be desired when it comes to keeping ice cream frozen inside it.  Nevertheless, we decided to give Anthony's special birthday dessert a shot since we could.  Conveniently, January here falls in the dry season when it is "hot" (like in the high 80s outside and 70 inside), so ice cream was more enjoyable than it is in June/July when it stays in the low 60s in our house...

We made it in a 8x8" pan because that was the biggest thing that could fit in the freezer, but Anthony's mom usually makes it in a 9x13" pan.  Basically, you crush up oreos and mix them with a little melted butter to make a crust on the bottom of the pan.  Let your ice cream get slightly softened, then spread it out on top of the oreo crust.  Put it in the freezer, then once the ice cream gets hard again, pour cooled hot fudge over the top and put it back to freeze.  Here's what we used:

15 oreos (or so)
2 Tbs. butter, melted
1 L ice cream

Hot fudge:


1 1/2 c. sugar
1/3 c. cocoa
3/4 c. milk
1/2 tsp. salt
Boil that for about 5 min. until it clumps in water
Then add:
1/2 tsp. vanilla
2 Tbs. butter

Despite the fact that the hot fudge was completely cool when I put it on the ice cream, it didn't get firm in the freezer.  In fact, it kind of turned out to be a soupy, chocolatey mess, but even though it wasn't really totally frozen, it was cold and sure tasted good!
