Paneer Curry
Remember the paneer? One of the things I used it in was a really nice sweet potato curry.
Ingredients:
4 cloves garlic, minced
2 small onions, chopped
3 large carrots, chopped
2 sweet potatoes, cubed
3 large tomatoes, chopped
1 Tbs. curry powder
1 tsp. ginger powder
1 cup water
1.5 cups paneer, cubed
salt
Cook the onions and garlic in 1-2 Tbs. oil until they are soft. Then, add the carrots and sweet potatoes and fry them for a few minutes. After that, add everything else except the paneer. Cover the pan and let the mixture simmer for about 15 minutes, until the sweet potato is tender. If you need to add more water to fully cook the sweet potato, do so. On the other hand, if it seems too wet when the sweet potato has become soft, remove the cover and let the curry cook a while longer so the water evaporates. At the very end, add the paneer and however much salt you want and stir for a couple minutes until the paneer is warmed up.
