Baked Fried Okra
It seems like summer in Texas, although technically it is not yet. But one of the currently widely available vegetables on the farm is okra. Generally in the past, I've just sauteed it by itself in olive oil or put it into stir fries, but this time I tried out an interesting recipe for baked "fried" okra. It was actually not very difficult (though not something you can make without planning ahead since it takes about 40 minutes total) and we ate it all in one sitting!
2-3 c. Sliced fresh okra
1 tsp. Garlic salt
1/4-1/2 c. Corn meal
Spray the inside of a ziploc bag with oil. Put okra and garlic salt in there and shake it up. Let it sit for 5-10min. Then, pour in the corn meal and shake it again.
Let it sit once more, then put it on a baking sheet lined with silicone mat. Try not to pour too much excess corn meal out onto the sheet because that gets really well done and can put out enough smoke to set off your smoke detector...
Bake at 425F for 20 min. Flip over and bake for an additional 10-15 min.
