Pumpkin cake

Although it isn't easy to be sleeping in different beds all the time and to be cooking with other peoples' pots and pans and ovens, it is nice to be with more people who will eat the same kinds of treats that I enjoy (not that Anthony doesn't appreciate some of the desserts I like, but I don't get much variety when I make something that only I like and then have to finish it off myself...)  So, I tried out this relatively healthy pumpkin cake for Anthony's parents and the three of us enjoyed it (though Anthony would have you know that he does eat pumpkin things, sometimes).  Since I didn't need to make it gluten free, I used regular flour rather than white rice flour.
