Fruit Pancake
This is a great recipe for breakfast if you like fruit and egg-y pancakes. It is also pretty easy. Again, it is something fun that I made with Leah.
Melt 1 Tbs. butter in a pie pan while pre-heating the oven to 400F.
Then, cut up a apple or some other kind of fruit (we used peach) and put the slices on the butter in the pan. Bake this for 5-10 min. Then sprinkle it with 2tsp. sugar and some cinnamon.
Meanwhile, mix together:
3/4 cup milk
2/3 cup flour
2 eggs
2 tsp. sugar
1/2 tsp. vanilla
some cinnamon
Pour all of this over the fruit and bake it for 20-25 minutes.
It gets all puffed up and then sinks down when you take it out of the oven.
