Agua de Tamarindo
I know that this is a Hispanic drink, but since there are fresh tamarind pods available here in Uganda, I can make it here too!
8 ounces (about 8 large) fresh tamarind pods
1/2 cup sugar
1 quart water
Clean the pods by pulling off the stems, strings, and hard outer shells (I had it easy because the ones I bought at the market already had the shells taken off).
Meanwhile, get the water boiling, then add the cleaned pods and the sugar. Boil it for about two minutes, and then pour it all into a non-metal container, where you will let it sit for 2 hours.
Now, mash the pods with a spoon or your hand, and strain the whole mixture through a fine sieve, pressing on the pulp to get some of the mush through the sieve. You can now drink it, but you need to stir it or shake it up before serving.
This is the final product: definitely not water!
