Beet Goat Cheese Jewels
This is something I have been wanting to make for a very long time and while we were in the US, I finally had the opportunity with my parents. We got an assortment of beets from the farmer's market and some goat cheese and started out.
First, boil the beets until they're fully cooked. Pull off the rough outer layer of the beets and slice them thinly. Sort according to color. Then, line a bread pan with plastic wrap (so you can get the thing out later) and put your first layer of beets in it. Carefully spread goat cheese over the beets, sprinkle with salt and pepper and a drizzle of olive oil, then put another layer of beets. Then more cheese, salt pepper and olive oil, then beets, and so on until you've used up all the beets. Press the beets into the cheese as you go. Once you have all your layers, wrap the plastic wrap around the top of the beet/cheese layers and put another pan on top with something heavy in it to press the layers together. Refrigerate it overnight.
The next day, take it out and unwrap it onto a cutting board. Slice into pieces.
Garnish with some salt and pepper and sliced basil and enjoy!
