Sweet Potato Paneer Kofta
It might look like food from another planet, but this was a great meal and a good use for some of the vast quantities of sweet potatoes we had for a while.
Kofta
4 sweet potatoes, cooked and mashed
paneer, cubed (I used the amount I got from making paneer out of 1 Liter of milk)
1/2 cup corn starch
1 Tbs. lemon juice
2 tsp. garam masala
2 tsp. salt
Mix all of the above ingredients together, then form them into balls the size of eggs. Fry them in oil until golden brown, then set aside
Sauce
1 large onion, diced
8 large tomatoes, diced
1/4 cup cashews (which had been soaked in boiling water 30 min)
4 cloves garlic, minced
1 1/2 tsp. garam masala
1 tsp. turmeric
1/2 tsp. ginger
1 tsp. salt
2 cups coconut milk
Fry the onion until soft, then add everything else except the coconut milk. Simmer until the tomatoes are soft. Then, blend everything until smooth, add the coconut milk, and let the sauce cook a few more minutes.
