Fancy Pumpkin Pie



For Thanksgiving, I wanted to try making a fancy pie crust for my pumpkin pie.  I had already transported most of our dishes and baking supplies to Uganda, so all I was left with for pie was an 9x9" pan.  It worked, though it was an unusually shaped pie.  I tried to do a lattice and then fancy leaves on top with the second half of a double pie crust.  What I learned is that trying to do a lattice crust isn't necessarily the best choice for a pie which is liquid before being baked...  As it sank into the pie, I salvaged it by covering up the submerged pieces with leaves!
