Jackfruit Muffins
I made these jackfruit muffins with one of our friends in Soroti, out of an overripe jackfruit from their jackfruit tree. I like jackfruit a lot, but the overripe fruit really was not very nice to eat - kind of sickly sweet and slimy. In muffins, however, it was a different story.
In case you haven't seen jackfruit before, it's a giant green fruit, bigger than your head. When you cut it open, there's sticky white sap which you have to maneuver around to get the pieces of edible yellow flesh out:
For the muffins, we used super ripe fruit (more ripe than the one in the picture above). We pureed the fruit in a blender first, then added all the rest of the ingredients, blending them all together before pouring the batter into muffin tins.
1 c. jackfruit
2 c. flour
1 egg
1 c. milk
1 Tbs. baking powder
1/2 c. oil
1 tsp. vanilla
1/4 c. sugar
1/2 tsp. salt
Bake at 375F for 20-25 minutes
They were good. The muffins had the scent of jackfruit, but not really strong jackfruit flavor. Everyone we shared them with was impressed (though a few people, who will remain unnamed, refused to taste them).
