Irish Potato Bread and St. Patrick's Day
Along the lines of events that happened in the (starting to become) semi-distant past, here's our St. Patrick's Day meal. Once it was all on the plate, we noticed that everything was kind of the same color, but it was too late by then! Anyway, it was still good. We had fish, roasted cabbage, and Irish potato bread (yet another use for the many pounds of potatoes we had).
Even after eating potatoes every day for months, this potato bread still sounds good.
Simmer 4 medium potatoes until tender. Drain and mash them, then add:
1/4 tsp. salt
1/4 c. flour
1 Tbs. butter
Flatten into a circle about 1/4" thick, cut into quarters, and cook on a skillet, flipping occasionally, until browned on both sides.
