High Altitude Banana Cake

It's not all that beautiful, but it is a cake baked at high altitude with no issues.  And really, who doesn't like banana cake?  Certainly not people in Uganda and Kenya.  Banana cake is always a big hit, but I needed some alterations in order to make it work at 7,000 feet.  This one is maybe a bit too sweet for a lot of Ugandans, but it seems like Kenyans enjoy sugary baked goods more (or are more used to them).


Here is the recipe:
2 1/2 c. flour
1 1/3 c. sugar
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. oil
1 tsp. vanilla
2/3 c. milk + 2 tsp. vinegar
2 eggs
3 bananas, mashed

Mix everything together well, then bake in a greased 9x13" pan at 350F for about 30-35 minutes.  My preference would be to frost it with chocolate frosting, but not everyone in this family likes that.
