Spinach Soup


Recently, we've been enjoying eating this soup all the time.  It is easy and quick to make and both of us like it a lot.



2 tablespoons olive oil
1 medium union chopped
2 cloves garlic, minced
2 cups cubed potatoes
4 cups water + bullion cubes
6 heaping cups of chard or collard greens or spinach - I do half chard and half collard greens.

Saute the onion and garlic in the olive oil for a few minutes, then add the potatoes and water + bullion.  Let this simmer for about five minutes, then add the collard greens if you're using them.  Simmer for about another ten minutes, until the potatoes are soft.  Next, add the chard and let it cook until the chard gets soft.  Finally, take the soup off the stove and puree it with an immersion blender.



Top with homemade croutons.  I made these with about 4 pieces of bread, cubed (it makes enough for 4 servings of soup).  Saute them in a frying pan with 1 Tbs. butter, 2 Tbs. olive oil, and about 1/2 tsp. of dried herbs of your choice.
