Tomato and Herb Quiche


Lately, my hens have been very productive in laying eggs, so we've been having lots of meals with eggs in them (there were some times we got 4 or 5 eggs a day!).

This is a sort of quiche that I made with what we had around the house. The crust is a basic pie crust.

The filling is as follows:
3 large tomatoes, sliced into circles
2 Tbs. fresh oregano, finely chopped
1/4 c. fresh basil, sliced thinly
5 eggs, lightly beaten
1/4 c. grated Parmesan cheese

I spread the pieces of tomato over the crust, sprinkled the oregano, basil, and cheese over it, then poured the eggs on top.  Bake at about 350F for 35 minutes.
