Carrot Cake and Easter Food
Yup, Easter already happened, but here are some pictures of the traditional and non-traditional foods we enjoyed as we celebrated Jesus' resurrection. I made twice baked potatoes and collard greens cooked with eggs. We also ate croissants. Although I love homemade croissants, I don't have a freezer in which I could keep more than a few of them, so it wasn't worth making the whole recipe. But, I found a cafe in town that sells croissants and got a couple from them!
I was also able to make carrot cake with real cream cheese frosting (I found cream cheese in a truck stop supermarket in Jinja - yes!) It was a great treat. Here are the recipes - I shared them last year.
