Poultry From the Yard to the Table


This is how we prepare chickens for eating here in Uganda.


There was also a Christmas turkey, but we failed to take pictures of that butchering process.  And it was much sadder to kill a turkey than an annoying rooster...

I learned something great, though, which is that you can cook meat in a pressure cooker!  And it turns out so much less tough than if you fry it/bake it/anything else.  We pressure cooked both of these chickens for 30 minutes and when the pressure subsided, the meat fell right off the bones.  The same thing with the turkey (though we had to borrow someone's giant pressure cooker since mine is only big enough for a chicken).  I wish I had known about pressure cooking meat before.  Although eating meat is pretty rare in this house, it makes cooking it much less daunting.
