Focaccia
I love Uganda, but being in Michigan in the summer is a wonderful time for making seasonal food. In Uganda, there isn't so much of the "seasonal" in terms of food. One seasonal food that I love is focaccia. This is a recipe that I found in the "Simply in Season" cookbook. The beauty of it is that once you have made the dough, you can be as creative as you want in the topping.
First, mix together:
1 Tbs. yeast
1 cup warm water
Then, combine that with:
1 cup whole wheat flour
1 Tbs. sugar
1.5 Tbs. salt
2 Tbs. olive oil
Finally, knead in:
1 3/4 to 2 1/4 white flour
Now, you put the dough in a greased bowl, cover the bowl with a towel, and let it rise for 45 minutes. After that, fold in a handful of chopped up basil. Then, you flatten it out on a 10"x15" pan so it looks like this:
Cover it and let it rest for another 10 minutes, and then add your toppings. I put on cherry tomatoes, onions, and red peppers.
After that, some feta cheese and grated Parmesan cheese. Finally drizzle on a little bit of olive oil.
Bake it at 450F for 12-20 minutes until it looks something like this:
