Potato and Egg Skillet Bake


What with all the eggs my hens are laying, there are lots of fun things that we can make.  Besides the normal meals, like quiche, fried rice, scrambled eggs with vegetables, etc., I've also tried out some new things too.  Since we don't eat that many potatoes, I thought I would take some ideas from different recipes to make a potato and egg baked meal.


Here is the recipe:
1 lb. potatoes, washed and diced
2 medium onions, sliced in thin strips
3 large tomatoes, diced
2 Tbs. fresh oregano, chopped
2 Tbs. fresh basil, chopped
1/4 c. grated cheese
4 eggs
olive oil
salt and pepper

Preheat the oven to about 400F.  Saute the potatoes and onions in a cast iron skillet until they are nearly cooked.  Then, add the tomatoes and spices and cook for another 5 minutes, until the tomatoes start to get soft.  Now, put the skillet in the oven, sprinkle with cheese, and crack the eggs on top of everything.  Bake for 10-15 minutes, until the eggs are fully cooked (unless you want them to be soft...)


It was fun and worth making again!
