Green Enchiladas
I had a lot of fun making salsa verde with the tomatillos from my garden this year. One time, I made chicken enchiladas with tomatillo sauce.
For the sauce, I sliced about 5 cups of tomatillos in half, 2 big onions, and 6 cloves of garlic. I added a couple tablespoons of water and simmered them until they got soft. Then, I pureed it all together to make the sauce.
And from a later time, duck enchiladas:
