Pasted Cucumber
Here in Uganda, there's a variety of cucumber that people grow, dry in the sun, and then cook with a peanut sauce. I've always seen it in the market and thought how funny it looked, but I had never cooked it myself. I got some help from Paul, who knows how to cook everything.
You start out by rinsing the cucumbers off, soaking them for a couple hours, and breaking them into bite-sized pieces. Then, bring to a boil and simmer until soft - 30 minutes to 1 hour.
Next, you add your peanut butter until the sauce is the thickness you like and salt and curry powder to your taste.
The final product:
Serve over rice or your favorite starch:
