Solar Dehydrator

Instead of making my own, not so nice solar dehydrator like I made when we lived in Soroti before, I had a carpenter put together a slightly better one for me.  This one has 2 levels of wire mesh with a wooden frame, so I can dry twice as much fruit at a time!  With hot sunny days, I can dry pineapple, bananas, mangoes, and papayas in 2-3 days.

I also figured out the trick to drying papaya so it doesn't turn out the consistency of cardboard: simmer the slices in sugar water for a few minutes, then drain the water off in a strainer before drying them.
