Amukeke


These are just slices of sweet potatoes dried in the sun so they can be stored for longer than the fresh potatoes.  I always remember fondly the first time I heard about amukeke (the name in Ateso) - in 2009.  A student at the Pentecostal Bible College was describing to me how good they are and how "just one of these can sustain a grown man working in the garden for a day".  All I could think of was lembas bread when he said that.  Of course, now that I've eaten amukeke, I can't imagine lembas bread tasting like this, but I still enjoy eating it (simmer until softened, then mix in some peanut butter and salt).
