Ugandan food
I love Ugandan food. I don't always need to eat it every day, but I've never been disappointed when someone served me traditional foods there.
This meal I didn't make, but Anthony and I enjoyed it at a restaurant in Soroti. They have certain foods prepared each day and you choose from what's available, so it's ready instantaneously. But way better than fast food. We got rice, eboo (cowpea leaves cooked with peanut sauce), and peas (plus a bonus side-dish of collard greens).
